Ingredients

  • ¼ cup heavy cream or half-and-half
  • 1 tbsp pumpkin purée
  • 1 tbsp maple syrup (or brown sugar syrup)
  • ¼ tsp pumpkin pie spice, plus more for dusting
  • ¼ tsp vanilla extract
  • 1 cup cold brew coffee (homemade French press cold brew preferred)
  • Pinch of fine salt
  • Ice, to serve
French press cold brew: Add 1 cup coarsely ground coffee to a French press and top with 4 cups cold water. Stir, cover, and steep in the fridge 12–16 hours. Press slowly, then pour off the concentrate. Use over ice and dilute to taste. Learn more in our step-by-step cold brew guide.

Instructions

  1. Make the pumpkin cream: In a small bowl, whisk the cream, pumpkin purée, maple syrup, pumpkin pie spice, vanilla, and salt until smooth and slightly frothy.
  2. Prep the glass: Fill a tall glass with ice and pour in the cold brew.
  3. Top: Slowly pour the pumpkin cream over the coffee so it cascades down in ribbons.
  4. Finish & serve: Dust lightly with pumpkin pie spice or cinnamon and enjoy right away.
Color it up: For a café-style look, drizzle a little maple or caramel down the inside of the glass before adding ice — it makes the pumpkin cream striations pop.
